Easy Jambalaya:
I used zatarain's lower sodium Jambalaya rice box.
1 chicken breast marinated in Italian dressing and chunked
1/2 of a sausage "u" (the packages that look like a u shape, I don't know the right name) use chicken or turkey for lower fat.
10 baby carrots, sliced
Big hand full of spinach
I added the carrots in with the rice.
Then the chicken, for a few minutes then the sausage. I added the spinach when it was done and ready to be stirred all up and fluffed. I let the lid sit for a min just to steam the spinach a bit.
Some things you can top with are hot sauce, sour cream, plain Greek yogurt, or green onions.
My whole family enjoyed and it was an easy and quick week night dinner.
