Spinach Artichoke Lasagna

12 strips of lasagna noodles, cooked half way
1 can artichoke hearts, quartered 
1 bag fresh spinach, sautéed and drained or frozen thawed and drained   
1 jar Alfredo sauce or can make homemade. 
1 pound chicken diced and cooked
1 small container ricotta cheese 
1 large egg
1 tbsp dried basil 
1 tbsp dried parsley
1 tsp black pepper 
1 tsp garlic salt 
1 cup shredded Mozzarella cheese 
1 cup shredded Parmesan cheese  

1. Mix chicken in with Alfredo sauce 
2. Mix ricotta cheese and next 5 ingredients 
3. Mix mozzarella and Parmesan cheese for top 
4. Butter dish
5. Layer noodles, sauce, ricotta cheese, then repeat. 
6. Top with mozzarella and Parmesan cheese mixture 
7. Cover with tinfoil 
8. Bake at 350 for 25 minutes
9. Uncover and bake for another 10-15 minutes. 
10. Let cool 
11. Serve

Mushroom Brie Soup

It's finally cooled off in Florida which means we are FREEZING. Time to make soups to warm our bones. We have a restaurant here that has a great mushroom brie soup, but instead of going out to eat I thought I could make it at home. This turned out so good!!! Even my 4 year old who "hates mushrooms" had two servings. 

What you need: 
16 oz mushrooms, quartered 
1/2lb Brie cheese 
32oz chicken broth 
2/3 cup heavy cream 
1/2 tsp dried thyme
1 tsp dried parsley 
1/2 onion,diced 
2-3 cloves garlic diced
4 tbsp butter 
S&P to taste 

How to:
1) Melt butter in pan 
2) Sauté onions and garlic in butter 
3) Add mushrooms till slightly caramelized
4) Put in pot with broth 
5) Add thyme, parsley and a little salt and pepper 
6) Add cheese 
7) Let simmer in low till cheese melts. 
8) Remove rind 
9) Add cream 
10) Take off heat
11) Purée 

Serve and enjoy!

You can also make in the crock pot. Add cream just before you serve. 
Low 8-10 hours 
High 4-6 hours

Fish Cakes over Cheese Grits

My husband fishes a lot which means we always have fish in the freezer. I've been stuck in a rut with it though. Cooking it the same few ways. 
As I was browsing the grocery store aka rushing to get milk and bread before the baby starts to climb out of the cart. I saw crab meat and thought dang that's expensive but crab cakes sound so good! Then duh!!! The idea to use fish instead of crab came to me. Why have I never thought of this before?! It makes perfect sense. Well it turned out great! 



Fish Cakes: 
2 filets of flakey fish. I used wahoo. If you are buying from the grocery cod or tilapia would be good. Salt and pepper both sides and cook it but just till its almost done thru. 
1 cup bread crumbs
1 tsp dried dill
1 tbs Cajun seasoning or old bay 
1 tsp dried cilantro 
1 tbs garlic salt 
1/4 cup Parmesan cheese 
1/2 cup mayonnaise 
1 tbsp spicy brown mustard 
1 large egg 
Oil 
How to:
1. Heat oil to medium low heat. 
2. Mix all dry ingredients together. Mix all wet ingredients together then mix the wet and dry together. 
3. Once fish is cooked break apart and gently mix in to mixture. 
4. Make cakes. 
5. Fry up, put on paper towels or paper bags to get excess oil off. 
6. Top with lemon and/or like juice 
7. Place on top of cheese grits 

Cheese Grits:
Follow directions on grits. Make sure to salt water. Once cooked add any cheese you like and 1 1/2 tbsp butter. I used Colby, Mozzarella and Parmesan cheeses from most to least in that order.

French Toast Casserole II

Here is another version on my pervious French toast casserole. This has more of a "fall" taste to it with warm spices added. I made it in a pie pan so you could even call it French toast pie ;-) perfect for Christmas or Thanksgiving morning! 



French Toast Casserole II:  
I used about 1-2 a loaf of sourdough bread that was in the verge of getting stale. Cut in bite size cubes. 
3 large eggs
1 cup milk 
1 tsp vanilla extract 
1/4 tsp allspice 
1/4 tsp nutmeg
1 1/2 tsp cinnamon 
2 tbsp or 1/8 cup brown sugar 
2 tbsp sweetened condensed milk 
(What do you do with the rest if the can you ask?! See my homemade coffee creamer post) 
Put bread in sprayed pan. 
Whisk all other ingredients together and pour over bread. 
Cook 25-30 minutes or until good and crispy on top. 

Topping: 
1/4 cup milk
3 tbsp powdered sugar 
1 Tbsp maple syrup 
Whisk all together and pour over cooked casserole as its cooling.  

Serves 4

Homemade Coffee Creamer

I saw it may times on Pinterest so I thought i'd give it a try. This is so easy and so good!!! I made mocha flavor but you can play with your own flavors.

In mason jar combine:
1 14oz can sweetened condensed milk
2 cups milk 
1 heaping tbsp cup Cocoa powder
1 tsp Vanilla extract
1 tbsp real honey 
-Make sure lid is on tight and shake till you can't shake it anymore. :-) use a whisk if you need to. 

Date with milk expiration date, refrigerate and enjoy in your coffee without all the stuff you can't pronounce! 

You could even add more cocoa powder and heat for hot cocoa!!

Cinnamon Sugar Pancakes

"I want pancakes" I hear it about ever other morning from my 4 year old. I do like pancakes too and I like to play with the recipe and try different things. Somedays I make them as healthy as I can and others... Well they are cooked in butter :-) This morning, was a butter morning and boy were they good!!! 



CINNAMON PANCAKES: 
2 cups AP flour 
1/4 cup sugar 
2 tbsp light brown sugar 
1 heaping tbsp cinnamon 
1/2 tsp baking powder 
1 tsp baking soda
1 large egg
2 cups milk
1 tsp vanilla extract 
1/4 cup vegetable oil 

How to:
Mix dry ingredients 
Mix wet ingredients 
Gently Mix wet and dry ingredients together
Heat pan to medium low heat and cook them up! 
Tip; flip when you see bubbles starting.

Cube Steak and Gravy with Green Beans

This meal was so easy, very low priced and so good! It is a stick to your bones good old, like my Papa made southern food. So if your on a diet maybe let it be your cheat day ;-). 

Steak and Gravy: 
1lb or 4 cube steak (I used venison) 
1 small yellow onion, large diced
5 tbsp butter - I know but it's needed. If you used beef you could get away with 3 since it will put off its own fat. Venison is very lean and you have to give it fat. 
2/3 cup AP flour 
1 1/2-2 cups beef broth
Garlic salt
Salt
Black pepper 
1/2 tsp Paprika 

How to:
-Put butter in large skillet on medium high
-Add onion 
-Let butter melt and onion cook a bit
-Add steaks, let cook on both sides till medium well. 
-Remove steaks, you can leave them whole or cut in to pieces. I cut mine to make it more kid friendly.  
-Add flour to butter and onion stirring till a thick paste, cook till golden brown. 
-Whisk in broth till all mixed together and smooth.
-Add seasonings to your taste. Remember if you use salted butter don't over due the salt. I always use unsalted so I needed a good bit, but always taste as you go! 
-Add steaks back and let summer on low thill thick. 
-Serve over rice or potatoes 

How to:
Green beans: 
Fresh green beans, trim the ends 
Chicken broth
1 tbsp butter 
Garlic salt and Black Pepper to taste 

-Trim and rinse beans 
-Put in pot and cover with broth, boil till tenderness you want. My family likes them pretty well done. 
-Pull out of stock 
-Add butter and seasonings and a little bit of broth. 
-Toss and serve.
It's that easy for tasty green beans everyone will like that are not out of a can!

Homemade Chicken Pot Pie

We were having the family over after church and I was trying to think of something easy but everyone would like. I'm not sure I know anyone who doesn't like a good chicken pot pie. This is also something I've never made from scratch (except the pie dough). It was so easy and turned out so good!!! I made 2 pies which served 10, a few had seconds and 3 slices left over. 
If you want to make 1 just cut the recipe in half. You can also freeze one, I read to freeze the filling in a zip lock not in the crust though. I haven't tried freezing yet. 

Mine weren't very pretty but were very yummy! 



Chicken Pot Pies: 
2 Refrigerated pie crust 
1lb chicken breast 
1lb thigh meat 
1 bag of frozen mixed veggies, you can use the peas and carrots or the mixed. I like the mixed to add more veggies. 
1 small yellow onion, diced 
2 celery stalks, diced
1 cup AP flour 
2 cups chicken broth 
2/3 cup 2% or whole milk 
1 stick of butter 
1/2 tbsp onion powder 
1/2 tbsp garlic powder 
1/2 tbsp dried thyme 
1 tbsp dried parsley 
1 tbsp salt 
1 tbsp black pepper 

How to:
-Boil chicken, let cool a bit and cut in to bite size pices. 
-In a large skillet melt butter and add all vegetables. 
-Just as frozen vegetable start to thaw add flour and stir till smooth. 
-Add chicken broth. 
-As it starts to bubble mix in milk. 
-Turn heat off and stir in chicken. 
-**let mix cool** it will mess with the dough if too hot.
-While mix is cooling let dough come to room temperature. 
-Split mix and add to pie pans.
-Top with dough. 
-Add slits to middle to let steam escape, get fancy here if you want. 
-Bake 425 30-35 min. Want crust golden brown and mix bubbling. 
*Put a cookie sheat under pie pans, trust me. I had a mess in my oven. 
-Let sit a few minutes and serve!

Chicken on a beer can (Grilled Dinner)

I've been MIA here for a few weeks due to moving into a new home but is only has 1/2 of the kitchen done. I am very excited to get a new kitchen but am still without counter tops, some cabinets and a sink. 
With that being said we have been eating out a lot and not good "oh I should put this on my blog" place and I was sick of it! So I did a big grocery shopping trip. I have a refrigerator, grill, and microwave so I've been making it work... Kind of but my family and is body's were ready for some good home cooked food! I chose the grill as my weapon and it was a good choice! We had chicken on a beer can aka beer butt chicken aka beer can chicken, potatoes and corn on the cob. I am not the best on the grill and have never made chicken like this but i am proud to say, it was perfectly cooked, delicious and requested to be done again by all! 




Chicken on a Beer Can: 
1 whole chicken 3-4lbs
1 beer 
1 cup butter, melted 
1 1/2 tbs garlic salt 
2 tsp onion powder 
1 tsp paprika 
1 tsp ground thyme 

Preheat grill on low 
Take giblets and such out and disregard or make gravy. 
Melt butter and mix in all seasonings. 
Pour and brush all over chicken and under skin. 
Drink 1/2 of the beer. 
Put half of beer on middle of pan and put chicken on top inserting it in the cavity. 
Cook on low with top down for 2-3 hours. 
Check internal temp on thigh is 180! 
Let rest 10 min. 
Carve and serve.


For the potatoes; I just quartered small gold potatoes. Added butter and season salt and but in a tin foil packet. Cooked on grill off heat for 30-45 minutes. 


Corn; it came still 1/2 in the husk and I left it that way. A little butter, salt and pepper. Wrapped each one in tin foil and cooked on the grill over the heat for 25-30 minutes . 


It was easy but did take some time and prep but so worth it!

Vegetable Fried Rice and Hoisin Glazed Pork Chops



Vegetable Fried Rice: 
Pick any veggies you want! My family is not big bell pepper eaters so I go with broccoli, carrots, snow peas, onion, cabbage, ect. Cut in to strips or dice. 

2 cups cold cooked rice (I like Jasmine rice for this) but you can use any. 
1/4 cup soy sauce
2 tbsp cooking oil
1 tsp sesame oil
1 tsp onion powder 
2 tsp garlic powder 
1 tbsp dried parsley
1 tbsp black pepper
1 scrambled egg 

In large pan or wok, on medium high heat. 
Start cooking egg.
Add cooking oil to pan add vegetables that take longest to cook (thicker and firmer) cook for a bit. 
Add rest of veggies, all seasonings and rice. Cook till starts to brown stir and cook a bit more. 
Just keep thinking back to a Japanese steak house and how they do it ;-) 

Pork Chop :
Marinade in Teriyaki 
Cook on grill, searing each side 
Brush each side with hoisin sauce as it cooks though.

A healthy twist on Chicken Parmesan

My kids love anything with Marinara on it, I'm trying to eat better and my husband is a meat and potatoes kind of guy. 

I had to think of something to please everyone. So I took 150 calorie pasta, chicken, spinach, and cheese and made a chicken Parmesan style pasta. 


How to:
Marinate 2 chicken breast in Italian dressing. Cut in to strips or leave whole your call. 
Skillet grilled till almost cooked through then put spinach and Parmesan and Mozzarella cheese on top. Threw under broiler for about 5 minutes. (Watch it though)
Serve over or with pasta and marinara sauce.  



My family really liked it even though it wasn't fried and had spinach!

Mrs. Milly's Chicken n' Rice

This is an easy dinner to feed a crowd! Takes about an hour+ to make though so give your self time. 
Its worth the time, my family really likes it!!! 



Chicken n Rice:
1 whole chicken 
2 boxes chicken broth 
6 stalks of celery, chopped 
5 carrots, cut in circles 
1 onion, chopped 
3 cups white rice
2 tbs black pepper
1 tbs salt
1 tbs garlic powder 

How to:
-Boil whole chicken in broth and cover rest of way with water. 20-30 minutes.
-Add in veggies 1/2 way through boil 
-Pull chicken out saving veggies and liquid. Set chicken a side to cool. 
-Put all veggies and 6 cups of broth from boiled chicken in another pot.
-Pick chicken off bone, dice and/or shred. 
-Bring broth, salt, pepper, garlic powder and veggies to boil. 
-Stir rice and picked chicken to boiling broth. Turn to low and cover. 
-Cook till liquid is gone (just like rice by its self) 

Serves 8-10

Broiled Mahi over Hot Pasta Salad

This is something I threw together that my whole family really enjoyed! Not sure about the fat but its not to bad for you either which is always a plus! 



Fish: 
1 lb. Mahi Mahi **Marinade in Italian dressing**
-Get a cast iron skillet very hot 
-Pre heat broil 
-Drain dressing off but do no rinse
-Season with Greek seasoning on both sides 
-Sear both sides quickly, then put under broiler 
-It will cook pretty quick so keep an eye on it

Sauce: 
1 tomato, diced 
1 tsp tomato paste 
1 clove of garlic, minced 
1 carrot, shredded 
1 heaping cup or 2 hand fulls of spinach, rough chopped 
1/2 cup italian dressing 
1/2 cup fetta cheese 
Shredded Parmesan cheese 
1 tbs of butter 
1 tbs olive oil 
1 tbs Greek seasoning 
1 12oz box of noodles, any kind you want to use 

How to:
-Get water ready for noodles
-In a sauce pan over medium low heat put olive oil and butter
-Add garlic and diced tomato, cook for a little bit
-Turn pan to low 
-Add italian dressing, greek seasoning, tomato paste and shredded carrot, stir all together 
-DO NOT DRAIN NOODLES, you will need some of the pasta water 
-Add noodles and a few tablespoon of pasta water
-Stir in spinach 
-Serve with fish on top and top with Parmesan cheese

Nutella chocolate chip cookies


My husband sent me this the other day so I made them while family was in town. 

They were so good! Just don't over cook them like I did. :-/ They weren't burnt just more crispy then I wanted. Have I said before, I'm not much of a baker... Everyone still enjoyed them!

Mrs. Milly's Lasagna

   I really need better photo taking skills...

What you need: 
1lb. ground beef 
1 can Hunts traditional spaghetti sauce 
1 can diced tomatoes 
1/2 small onion, diced
2 cloves garlic, minced 
1 carrot finely shredded 
1 heaping cup spinach, chopped 
1 tbs cracked black pepper
1 tbs garlic salt 
1/2 tbs dried basil
1 tbs dried parsley 
1/4 cup cottage cheese
1 15oz container ricotta cheese 
1 egg 
2 cups shredded mozzarella cheese 
10 Lasagna noodles 
 
How to: 
Add a little olive oil to large skillet heated to medium 
- Add onion cook for about 2 minutes 
- Start water boiling for noodles 
- Lay out tin foil for when noodles are half way cooked. You want them to still need some cooking. Put on foil to keep from sticking to each other. 
Add ground beef and garlic, brown meat
- While meat is browning put ricotta cheese, cottage cheese, egg and 1/2 of parsley in a bowl and mix together
- Add garlic salt, pepper, basil, and parsley to meat as it finishes browning 
- Pour in to meat, tomatoes not drained and can of sauce. Mix all together. 
- Mix in carrot and spinach to meat and sauce mixture. Take off heat and put to the side. 
Layering time: 
1/3 of sauce 
4 noodles over lapping edges 
1/3 of Cheese mixture 
1/3 of Sauce 
3 noodles 
Repeat meat and cheese and 3 noodle layer (you want 3 layers ending with sauce on top) 
Top with the mozzarella cheese   

Cover with tin foil bake at 350 degrees for 35 minutes, uncover and bake another 15-20 minutes. Let sit 10-15 minutes. 
Makes 12+ servings   
 
My brothers, nephew, dad, husband, sons and I all really liked it and non of the kids noticed the veggies his in there ;-)

Macaroni Stroganoff

This is an easy week night meal with a lot of flavor! 

I had some ground venison that needed to be used so I went to the pantry to figure out what to make that was quick and easy. I had a package of stroganoff seasoning
and macaroni noodles so there you have it, how a great idea was formed ;-). Just kidding but it did turn out to be a really good big meal! 

What you need: 
1lb. ground beef 
6-8 large mushrooms, I dice so kids can't see them but cut how you want. 
1/4 of a sweet onion, diced
1 clove of garlic minced 
1 package stroganoff seasoning 
1 cup water
1 cup sour cream 
1 small box macaroni noodles
1 tbs olive oil

Steps: 
- Get a pot of water started for noodles 
- Put oil in med/high heat pan
- Add onion and sauté till just getting transparent 
- Add garlic give a good stir then add meat. 
- Brown meat to medium well
- Add noodles to boiling water 
- Just as meats almost done add mushrooms and finish browning. 
- Only drain some of the fat off the meat
- Add water and seasoning and follow instructions on packet 
- Drain noodles when done 
- Add sour cream, stir in 
- Mix meat mixture with noodles 
- Serve 

Made for a bunch of guys and they all liked it a lot!

Hamburger Wrap

So tonight was a throw it together kind of night. I had ground venison thawed and soft taco tortillas but we just ate out Mexican a few days ago. I had noodles but no sour cream for a Stroganoff and no buns for burgers. So at 5:30pm with hungry kids at my heals I thought "hamburger tacos" which as I cooked turned in to a wrap.

The Meat:
1lb. ground beef or venison 
1/4-1/2 an onion, diced
1 garlic clove, minced 
1 tbs sriracha hot sauce (more or less to taste) 
1 tbs dried parsley flakes 
1 tbs Worcestershire sauce 
2 tsp Season salt
Black pepper to taste 
1 tbs olive oil 

How to:
Put oil in pan and heat to medium high heat. Add onions and sweat for a bit them add garlic and ground beef. Add all seasoning to beef and brown. 

I added the meat to a tortilla that I heated for 10 seconds in the microwave with provolone cheese in it. Then made it like a burger by topping with spinach instead of lettuce, pickles, ketchup and mustard. My husband just did chews and spinach and said it didn't need anything else. My son mixed his in his Mac-n-cheese. We all liked it a lot. A good seasoning recipe for burgers too!

Bacon Wrapped Meatloaf

  (We dung in to fast for a cooked photo) 

Meatloaf:
1lb. ground beef (or venison like I use)
1lb. ground pork
1 large carrot, shredded
1/2 cup onion, chopped
1 clove garlic, minced
1/2 cup bread crumbs
2 eggs
2 tbs ketchup
1 tbs Worcestershire sauce
A few dashes hot sauce
Season Salt, to taste
Cracked black pepper, to taste
5-6 strips of bacon

Mix gently all together except bacon. Make in loaf shape and stretch bacon strips over top, tucking underneath. 
Cook at 350 degrees for 45 minutes. Let sit a bit then serve. 
In my opinion, good creamy mashed potatoes and a green veggie go great with meatloaf! 

I took this to our new home we are working on remodeling before moving, to feed 4 adults and 2 kids and it was plenty and everyone enjoyed!

Cinnamon toast crunch pancakes



Sounds and looks like a delicious good idea right?! 
The Internet gives me all kinds of ideas and some are great, others not so much. This was a FAIL! 
I didn't find a recipe but after looking for new pancake ideas for my kids this popped in my head. I used a basic pancake recipe but used brown sugar, added cinnamon and put finely crunched up Cinnamon Toast Crunch in with the flour. Well it tasted nothing like cinnamon toast crunch and the pieces I put on top got soggy quickly from the syrup. It was eatable but not recommended.

Easy Pork Chop Marinade


Mix all together, put 4 pork chops in ziplock and cover all over with marinade. Marinate for an hour no more needed or may be to salty. Drizzle a little sesame oil on each side then cook on grill or in cast iron skillet. 

So easy and so good!!!

French Toast Casserole

I made this a few weeks back and just saw the photo on my phone. 

SO GOOD & SO EASY! 



French toast casserole:
4 eggs 
1 1/2 cup milk
1 1/2 tsp vanilla 
1 tbs cinnamon 
I used a little more than 1/2 a loaf of bread I had that was going stale. Cut it in to cubes. 

Mix everything but bread together. 
Put bread in brownie pan. 
Pour mixture over bread and shake pan to get it all over. 

Bake 350 for 30 minutes or till crisp and golden brown on top.

Topping ideas: fruit, warm syrup, honey, powdered sugar, or nothing (its that tasty)

Grilled wahoo and yellow squash

This is an easy quick meal 



Wahoo
Marinated for about 4-6 hours in Italian dressing. 
Cut length wise season with cut part with a little sesame oil, garlic powder and Cajun seasoning. 
Grill till medium well then foil on plate to finish cooking. 

Squash
Cut in half length wise 
Coat with olive oil
Season skin side lightly with sea salt 
Open side with garlic salt, cracked black pepper, onion powder and paprika 
Grill till tender 

I served with herb and butter mashed potatoes (instant, shhh ;-) ) 

I made a homemade "fish dip" I didn't measure or write down what I used so ill post that next fish meal I need more.

Pancakes, with a healthy background



You know how you always see "healthy pancakes" or "2 ingredient pancakes" well they just don't look that tasty to me. I thought I'd take some of those ideas and make, "pancakes, with a healthy background". 

2/3 cup of flour 
1 1/2 teaspoon milled flaxseed 
1/2 a teaspoon baking powder
1 1/2 teaspoon brown sugar 
2 eggs 
1 banana
1/2 cup Vanilla yogurt

Mix all together with mixer or blender and cook in hot pan or on griddle. 

Serve with syrup or honey. 

Makes 4-6 pancakes

Soft Chocolate Chip Cookies



My son and I wanted cookies so I grabbed a box from the bakery at the store. As I contained my shopping I thought, you know what "lets make our own". he loves to help me cook so he was all about it. I am not much of a baker at all, I can throw together a meal and wow everyone eating but if dessert requires baking you might not want to dive right in without a taste test first lol. 

I went to good ol' Pinterest to find a recipe because I like them soft and wasn't sure how to get them that way. I found a few and stuck with this one but took a few things from others.

I added an egg yolk with the one large egg and it was straight from fridge.
Also I used the whole 12oz bag of semi sweet chocolate chips. Which is about 2 cups. There were some left in the bowl but they are so much better with chips in each bite 😊. 
I would change the amount of corn starch because I could taste it a bit. 
Maybe 1 1/2 tsp instead of 2. 
I added a little more butter because well, it needed it. 
Also I didn't read how long and over cooked them just a bit, still soft but could tell I cooked to long on some. I did 18 min, think 10 would be perfect at 350. 

They turned out good, taking them to my I laws for dinner tonight!

Asian style chicken and veggies over rice

Asian marinade: 
1 cup oil
1 tbsp sesame oil
1 tbsp fresh ground ginger
1 1/2 tbsp soy sauce 
1/4 tsp ground cayenne red pepper 
1/2 tsp garlic powder 
1/2 tsp onion powder
1/2 tsp black pepper 
1/2 tsp salt 

Whisk all together. 



Chicken prep: 
1-1.5 lbs chicken breast, thinly sliced.
Cut chicken in thin slices and marinade at least 6-8 hours. Cook chicken in pan draining off some marinade first. Keep a few tablespoons for vegetables. I browned it in a large skillet. 

Veggies:
I used what I had, you can do the same if you want. 
I used: 
2 medium yellow squash
1 small box of frozen snow peas
A few mushrooms 
1/4 of an onion (yellow or sweet) 
1 heaping cup of kale 
1/2 bag baby spinach 
2 tbsp soy sauce
2 tbsp ponzu sauce
2 tsp garlic salt 
2 tsp black pepper 
1 tsp ground cayenne red pepper  
1 tsp fresh ground ginger 
1 tbsp unsalted butter

Take 2 tbsp of the marinade and 1 tbsp of unsalted butter and add to med heat pan. Start with denser vegetables, squash and frozen peas add others after a few minutes, greens last. Mix all together with seasoning and let greens welt. They all don't take but 8 min. to cook. Mix in chicken and serve over rice. 



The whole family loved it and it was easy on my tummy.

Juice

 JUICE IS YUMMY


My husband and I have started juicing again and I thought I would share a few we like. 

1 mango
2 green apples
Half dollar size bunch of wheat grass
2 hand fulls spinach
quarter size chunk ginger
1 large carrot

2 green apples
1/2 cucumber
hand full spinach
2 large carrots

1 mango
2 hand fulls kale
half dollar size bunch wheat grass
quarter size chunk ginger
2 green apples

I will add more in time.

Great for IBD sufferers!!!

Healthy Banana Muffins



Banana Muffins:
1 cup whole wheat flour
1 cup AP flour 
2 tsp baking powder
1 tsp baking soda 
1/2 tbsp cinnamon 
Pinch of salt 
2 tbsp milled flax seed 
2 ripe bananas, mashed
1/2 cup milk 
1 tsp vanilla extract
1/2 tsp almond extract
1/4 cup vanilla yogurt
1/4 cup unsweetened apple sauce 
1/2 cup honey

Mix all dry ingredient in one bowl and wet in another then mix the 2 together.

Scoop in muffin tin, bake 375 for 15 min.

Topped with a little powdered sugar.

Makes 12 muffins.

Feedback:
Easy on the tummy for my IBD followers.

My dad, sons and I really liked them!
