Soft Chocolate Chip Cookies



My son and I wanted cookies so I grabbed a box from the bakery at the store. As I contained my shopping I thought, you know what "lets make our own". he loves to help me cook so he was all about it. I am not much of a baker at all, I can throw together a meal and wow everyone eating but if dessert requires baking you might not want to dive right in without a taste test first lol. 

I went to good ol' Pinterest to find a recipe because I like them soft and wasn't sure how to get them that way. I found a few and stuck with this one but took a few things from others.

I added an egg yolk with the one large egg and it was straight from fridge.
Also I used the whole 12oz bag of semi sweet chocolate chips. Which is about 2 cups. There were some left in the bowl but they are so much better with chips in each bite 😊. 
I would change the amount of corn starch because I could taste it a bit. 
Maybe 1 1/2 tsp instead of 2. 
I added a little more butter because well, it needed it. 
Also I didn't read how long and over cooked them just a bit, still soft but could tell I cooked to long on some. I did 18 min, think 10 would be perfect at 350. 

They turned out good, taking them to my I laws for dinner tonight!

Asian style chicken and veggies over rice

Asian marinade: 
1 cup oil
1 tbsp sesame oil
1 tbsp fresh ground ginger
1 1/2 tbsp soy sauce 
1/4 tsp ground cayenne red pepper 
1/2 tsp garlic powder 
1/2 tsp onion powder
1/2 tsp black pepper 
1/2 tsp salt 

Whisk all together. 



Chicken prep: 
1-1.5 lbs chicken breast, thinly sliced.
Cut chicken in thin slices and marinade at least 6-8 hours. Cook chicken in pan draining off some marinade first. Keep a few tablespoons for vegetables. I browned it in a large skillet. 

Veggies:
I used what I had, you can do the same if you want. 
I used: 
2 medium yellow squash
1 small box of frozen snow peas
A few mushrooms 
1/4 of an onion (yellow or sweet) 
1 heaping cup of kale 
1/2 bag baby spinach 
2 tbsp soy sauce
2 tbsp ponzu sauce
2 tsp garlic salt 
2 tsp black pepper 
1 tsp ground cayenne red pepper  
1 tsp fresh ground ginger 
1 tbsp unsalted butter

Take 2 tbsp of the marinade and 1 tbsp of unsalted butter and add to med heat pan. Start with denser vegetables, squash and frozen peas add others after a few minutes, greens last. Mix all together with seasoning and let greens welt. They all don't take but 8 min. to cook. Mix in chicken and serve over rice. 



The whole family loved it and it was easy on my tummy.

Juice

 JUICE IS YUMMY


My husband and I have started juicing again and I thought I would share a few we like. 

1 mango
2 green apples
Half dollar size bunch of wheat grass
2 hand fulls spinach
quarter size chunk ginger
1 large carrot

2 green apples
1/2 cucumber
hand full spinach
2 large carrots

1 mango
2 hand fulls kale
half dollar size bunch wheat grass
quarter size chunk ginger
2 green apples

I will add more in time.

Great for IBD sufferers!!!

Healthy Banana Muffins



Banana Muffins:
1 cup whole wheat flour
1 cup AP flour 
2 tsp baking powder
1 tsp baking soda 
1/2 tbsp cinnamon 
Pinch of salt 
2 tbsp milled flax seed 
2 ripe bananas, mashed
1/2 cup milk 
1 tsp vanilla extract
1/2 tsp almond extract
1/4 cup vanilla yogurt
1/4 cup unsweetened apple sauce 
1/2 cup honey

Mix all dry ingredient in one bowl and wet in another then mix the 2 together.

Scoop in muffin tin, bake 375 for 15 min.

Topped with a little powdered sugar.

Makes 12 muffins.

Simple Baked Fish

Put fish in bowl, add about 1/2 cup oil of choice then add all seasoning in photo to taste. I just eyed everything. 


Bake 350 10-15 minutes, careful not to over cook. 

Serve with yummy sides. 

You can use almost any fish you want to bake with this seasoning! I used wahoo but Mahi Mahi, flounder, trout, ect. would be good!

Greek Chicken Marinade

This is one of my own creations just from reading others and making my own. I love experimenting with sauces and marinades :-) 


Best if you let it sit over night and great from broiling or grilling chicken. I like it on dark meat or wings. 

For my IBD followers this is easy on the tummy too!!

Steak Dip Sandwich


Meat: 
1lb cube steak, cut in strips
1 tbsp Olive oil
1 1/2 packages AuJus sauce 
2 tbsp worcestershire sauce
1 tsp Onion powder
1 tsp Garlic powder
1 tsp Paprika 
1 tbsp Parsley 
Water according to AuJus packet 

Season meat with all seasoning and brown up in a little oil. Add water simmer 8-10 min. 

Topping: 
Olive oil 
Mushrooms, sliced
Onion, sliced
Red wine 
Worcestershire sauce

Sauté mushrooms and onions in oil and Worcestershire sauce. Add red wine and simmer. Use as sandwich topping. 

Assemble: 
Toast bun, add meat and ladle juice in separate bowl to dip, add cheese if want and top with mushroom and onion mix. 

My family loved this and has asked for it again. 

Makes 3 good size sandwiches.
